Sweet Potato Gratin

  Serves 8-10 4 sweet potatoes sliced ¼” thick 2 cups of sharp cheddar ½ cup of Gruyere cheese 1 jar of Just Jan’s Balsamic Onion Savory Spread 1 tsp Just Jan’s Mango Chipotle Spread ¼  cup unsalted butter 1 cup milk 1 cup half and half ¼ cup all purpose flour 1 tsp onion powder Pinch of nutmeg Black pepper to taste Dash of white pepper Dash Paprika   In a small pan on low heat, melt the butter then mix in flour stirring until flour is fully incorporated. Cauliflower Quinoa Mash

Serves 4 1 cup Half and half 1 cup milk (we used 1%) 1 cup Quinoa 1/2 Large cauliflower, remove stem and cut head into small florets ¾ cup cut pancetta 2-3 Tbsp Just Jan’s Balsamic Onion Savory Spread ⅛ tsp garlic powder 1 tsp onion powder Dash Paprika Salt and Pepper to taste Chives for garnish   Place quinoa, cauliflower, milk and ½ and ½ in a medium size pot over low heat. Stir in salt & pepper, garlic powder, and onion powder and bring mixture to a low boil, then turn heat down to a simmer. Keep an eye on pot to make sure it doesn’t boil over.  Cook until quinoa is cooked through – soft, not mushy....

Beefy Asian Noodle Salad

Salad Ingredients: 1 1/2 – 2 lb Flank Steak 1 12oz Package flat rice noodles (prepared to instructions) 1/2 head chopped Romaine lettuce 2 carrots julienned 1/2 medium jicama, peeled and chopped in 1/2″ pieces 1/2 cup cilantro, rough chopped 1/2 cup red bell pepper julienned 1/4 medium red onion sliced thin 1 TBSP toasted sesame seeds 2 green onions sliced (both white and green part)   For flank steak marinade In a small bowl mix the following: 1/2 cup Just Jan’s Tangerine Marmalade 3 TBSP Soy Sauce (I use low sodium) 1 TBSP fresh grated ginger 1 tsp. red pepper flakes 3 cloves minced garlic 2 TBSP Nuc Mam (or similar fish sauce) 2 TBSP Miren 1 tsp sesame...

Rosemary Ham & Cheese Panini

  In this crispy sandwich we used a ciabatta roll toasted in a cast iron skillet with a heavy pan placed on top to give the panini effect.  The dipping sauce on the side is what really makes everything extra special.  You could make a bunch of these and cut into small pieces and serve on a platter for Game Day!!   Ingredients: 2 Ciabatta Rolls 4 to 6 Thinly Sliced Pieces of Ham (The Rosemary Ham from Trader Joe’s is just great on this sandwich) 2 to 4 Slices of White Cheddar or Manchego Cheese a Few tsp. of Olive Oil for the skillet Dipping Sauce:  (the important part) 3 Tbp. of Just Jan’s Apricot Spread 1 Tbsp. Jammin' BLT

Summer evening meals using the fresh garden ingredients are the best.  The ease of the classic bacon lettuce and tomato sandwich is great because everyone loves them.  After reading the June Bon Appetit magazine from cover to cover on a recent flight, this interesting twist on a BLT naturally stood out. The usual suspects.  Bacon.  (We used a applewood smoked nitrate-free version) and a crusty Italian bread toasted. Crunchy romaine lettuce.   Tomatoes ripe off the neighbor’s vine!
