Fig and Balsamic Chicken

Ingredients: Whole chicken half of a cut lemon  4-5 sprigs fresh thyme Kosher salt  Ground pepper  2 Tbsp. olive oil  For the sauce: 1 Tbsp olive oil 1/3 cup Just Jan's Kadota Fig Spread 2 Tbsp good quality Balsamic vinegar 1/2 chopped shallot 2 cloves minced garlic 1 - 2 Tbsp unsalted butter Kosher salt - generous pinch Ground pepper - to taste Preheat the oven to 400 degrees. Coat the chicken with olive oil and season with salt and pepper. Place the lemon half and the thyme inside the cavity of the chicken and put it breast side down in a large roasting pan. Oat Chocolate Chip Cookies

  ½ cup unsalted butter, room temperature ¾ cup golden brown sugar 1 ½ tsp vanilla extract 1 egg room temperature 1 ¼ cup oat flour 1 ½ cups old fashioned oats ½ tsp kosher salt ½ tsp baking soda ½ tsp cinnamon ¾ cup dark chocolate chip (or semi-sweet) Preheat oven to 350 degrees. Beat butter and sugar for 2 minutes until thoroughly combined. Beat in vanilla and egg. In a separate bowl mix together the oats, oat flour, baking soda, salt and cinnamon. Add the dry ingredients to the wet until combined then stir in the chocolate chips. Drop by heaping tablespoons onto baking sheets lined with parchment. Bake 10-12 minutes until golden brown. Carrot Cake Cupcakes

Cake ingredients: 1 cup all purpose flour 3/4 cup granulated sugar 1 tsp baking powder 1 tsp baking soda ½ tsp salt 1 tsp ground cinnamon 2 large eggs, room temperature ¾ cup vegetable oil 1 cup grated carrots ½ cup chopped walnuts or pecans Preheat the oven to 350 degrees F.  In a medium bowl, sift the flour, baking powder, baking soda, salt and cinnamon. Set aside. Using a hand mixer or stand mixer fitted with the paddle attachment, combine the eggs and sugar on medium speed until light in color. Jan's French Toast Bake

French Toast: ½ - ¾ (4-5 cups) loaf of bread broken into chunky pieces. I used a portion of an almost stale loaf I had. 3 whole eggs 1 ½ cups whole milk ⅓ cup brown sugar ½ cup (4 oz.) cream cheese 1 Tbsp vanilla 2 Tbsp Any jam you have on hand. I used Just Jan’s organic strawberry spread. Topping: ½ cup chopped pecans or walnuts 2 Tbsp maple syrup ½ tsp cinnamon In a large bowl whisk the eggs, milk, brown sugar and vanilla. Chocolate Dipped Coconut Balls

  You can call these what ever you want but these yummy treats remind me of a Mounds bar only with a citrus zing!I swapped out the honey/maple syrup for 4 Tbsp. of my tangerine marmalade to this recipe I found @pinchofyum 🍊🤗 thank you Lindsay for this delicious creation.
