½ cup unsalted butter, room temperature
¾ cup golden brown sugar
1 ½ tsp vanilla extract
1 egg room temperature
1 ¼ cup oat flour
1 ½ cups old fashioned oats
½ tsp kosher salt
½ tsp baking soda
½ tsp cinnamon
¾ cup dark chocolate chip (or semi-sweet)
Preheat oven to 350 degrees.
Beat butter and sugar for 2 minutes until thoroughly combined. Beat in vanilla and egg.
In a separate bowl mix together the oats, oat flour, baking soda, salt and cinnamon.
Add the dry ingredients to the wet until combined then stir in the chocolate chips.
Drop by heaping tablespoons onto baking sheets lined with parchment. Bake 10-12 minutes until golden brown. Let cool on pans for 5 minutes then transfer to a wire rack to cool completely.
These store well, but I guarantee they won’t last a day!
