Fig Pizza

  Fig Pizza Ingredients 1 package soft goat cheese 1 block parmesan cheese 1 package fresh pizza dough 2 Tbs olive oil ½ cup Just Jan's Fig Spread freshly ground salt & pepper, to taste 1 bunch arugula 6 slices thinly sliced prosciuitto 1 bunch arugula     Instructions 1. Slice the goat cheese. Thinly slice the Parmesan cheese. 2. Roll out the fresh pizza dough or stretch with your hands. 3. Drizzle the olive oil on the fresh pizza dough and spread with the fig spread. Add slices of  goat cheese. 4. Sprinkle with salt and pepper, and bake the dough according to package instructions (about 15 minutes) until golden brown. 5. Remove pizza from the oven, and top with the prosciutto. 6. Tequila Citrus Fish Skewers

The fish: I used a variety of beautiful fresh fish; salmon, sea bass and halibut, you can use whatever you like, or whatever is fresh. I cut the fish into large cubes about 2 inches wide, I skweered them with red onion and bell pepper in between. Fish Seasoning In a small saucepan combine the following and bring to a simmer over medium-low heat. 2 oz. tequila 1/3 cup orange juice 1 tsp. lime zest Juice from 1 lime 1 TBSP Soy Sauce 1 TBSP Just Jan's Tangerine Marmalade 2 tsp. Herb Seasoning (I used Chef Ryan Rondeno Citrus Herb Rub)  You can use the following in place of this rub -     1/2 tsp. Kosher Salt    1/2 tsp....

Tangerine Chicken Stir Fry

Ingredients: 1 lb White meat chicken cut into cubes 1 lb stir fry vegetables or any combination of the following:    Mushrooms, bell pepper, carrots, onions, snow peas For the sauce: 1 TBSP Sesame oil 2 TBSP Hoisin 1 1/2 TBSP Just Jan's Tangerine Marmalade 1/2 tsp Asian spice blend -  sweet peppers, garlic, ginger, black pepper, galangal, hot peppers, lemon grass, basil and cilantro. ​1 TBSP Just Jan's Tangerine Sriracha - if you desire a spicier stir fry,  just add a bit more. 2 Tsp.
