Jan's Granola

  One of the best things about making your own granola is it’s like a blank canvas. I start with rolled oats and then think about the other flavors I’d like to add to make a complete perfect picture. I am calling this recipe,  Granola 2020 because without going to the store as often, I’m relying on and using what we have on hand. In going through my cupboards and freezer (for the nuts), I found some of the key ingredients to make this granola. Enjoy! Jan's French Toast Bake

French Toast: ½ - ¾ (4-5 cups) loaf of bread broken into chunky pieces. I used a portion of an almost stale loaf I had. 3 whole eggs 1 ½ cups whole milk ⅓ cup brown sugar ½ cup (4 oz.) cream cheese 1 Tbsp vanilla 2 Tbsp Any jam you have on hand. Bacon, Cheddar, Chive, Irish Soda Bread

Ingredients 4 cups AP flour 2 tbsp Sugar 1 tsp baking soda 1 tsp salt 4 tbsp salted butter 1 ¼ cup butter milk ½ cup  1 large egg ½ lb cooked chopped bacon 1 cup shredded sharp cheddar cheese ½ cup chopped chives Instructions Preheat oven to 375 degrees Combine flour, sugar, baking soda and salt in the bowl of an electric mixer.  Using the paddle attachment on low speed mix in the butter, until combined with flour In a separate bowl mix together the buttermilk, sour cream and egg.  Turn mixer on low and slowly add buttermilk, sour cream and egg mixture.  A sticky dough should quickly form.  Turn off the mixer and begin to add in bacon,...

Tangerine Ricotta Fritters

4-5 cups vegetable oil ¾ cup all purpose flour 2 teaspoons baking powder ¼ teaspoon salt zest of one tangerine 2 ½ tablespoons Just Jan’s Tangerine Marmalade juice of ½ of tangerine 1 cup whole milk ricotta 2 eggs, lightly beaten 1 tablespoon granulated sugar 1 ½ teaspoons pure vanilla extract Confectioners sugar Heat 1- 2 inches of oil in a large wide heavy saucepan until it registers 370° F. In a small bowl, whisk the flour, baking powder, tangerine zest and salt. Set aside.
