Jan's Granola

  One of the best things about making your own granola is it’s like a blank canvas. I start with rolled oats and then think about the other flavors I’d like to add to make a complete perfect picture. I am calling this recipe,  Granola 2020 because without going to the store as often, I’m relying on and using what we have on hand. In going through my cupboards and freezer (for the nuts), I found some of the key ingredients to make this granola. Enjoy! "Carrot Cake" Cookies

Ingredients: 1/2 cup unsalted butter - room temperature  1/2 cup brown sugar 1/3 cup tangerine marmalade 1 egg 2/3 cup shredded (fine) carrot, not packed 1 tsp vanilla 1 cup + 3 Tbsp all purpose flour 1/2 cup rolled oats (not instant) 1/4 cup unsweetened shredded coconut  1/2 tsp baking soda 1/2 tsp baking powder 1/4 tsp kosher salt 1/2 tsp cinnamon 1/2 cup chocolate chips Preheat the oven to 350 degrees. Apricot Pepper Glazed Tofu

  When coming up with a recipe that uses my Apricot Pepper spread, I thought about a recipe my daughter made for me recently. It was a savory, slightly sweet and spicy sauce that caramelized around the crispy tofu and when drizzled on top of the rice made a delicious and very flavorful dish.
