For the salad:
Toss together any mixed greens, I used red leaf and arugula.
Carrots
Heirloom tomato
Avocado
Red bell pepper
Macadamia nuts, chopped
Cilantro (optional)
Fresh mango
Top with the grilled chicken
Dressing:
2-3 Tbsp Olive oil
1 Tbsp Lemon juice
Splash or more white wine vinegar
1 Tbsp Apricot Pepper Spread
1 tsp Dijon mustard
Pinch kosher salt
Pepper to taste
