Jerk Chicken Mixed Green Salad with Apricot Pepper Vinaigrette


For the salad:
Toss together any mixed greens, I used red leaf and arugula.
Heirloom tomato
Red bell pepper
Macadamia nuts, chopped
Cilantro (optional)
Fresh mango
Top with the grilled chicken

2-3 Tbsp Olive oil
1 Tbsp Lemon juice
Splash or more white wine vinegar
1 Tbsp Apricot Pepper Spread
1 tsp Dijon mustard
Pinch kosher salt
Pepper to taste
