Carrot Cake Cupcakes
Cake ingredients: 1 cup all purpose flour 3/4 cup granulated sugar 1 tsp baking powder 1 tsp baking soda ½ tsp salt 1 tsp ground cinnamon 2 large eggs, room temperature ¾ cup vegetable oil 1 cup grated carrots ½ cup chopped walnuts or pecans Preheat the oven to 350 degrees F. In a medium bowl, sift the flour, baking powder, baking soda, salt and cinnamon. Set aside. Using a hand mixer or stand mixer fitted with the paddle attachment, combine the eggs and sugar on medium speed until light in color.
