Strawberry Rhubarb Collins
2 oz. vodka or gin
1 oz. *rhubarb simple syrup
1 Tbsp. Just Jan’s Organic Strawberry Spread
juice of 1/2 lemon or lime
Splash of club soda
In a shaker combine the vodka, simple syrup, Just Jan’s Organic Strawberry Spread and lemon or lime juice. Shake until well combined. Pour into a glass and add ice.
*Rhubarb Simple Syrup:
makes about 1 cup
4 c. chopped rhubarb
1 c. sugar
1 c. water
Combine the rhubarb, sugar, and water in sauce pan and bring to a boil. Lower the heat to a simmer and cook until the rhubarb is soft and the liquid has thickened slightly. About 20 min.
Set a mesh strainer over a bowl. Pour the rhubarb through the strainer until most of the liquid is in the bowl. Press the solids a bit with the back of a spoon to extract more syrup.
Pour into a clean jar. Refrigerate. Will keep for quite a while in your fridge.
