When I need to make something tasty and fast, whipping up a quick pesto is one of my favorite options. Typically, I make pesto with basil, its a great way to use up excess basil, but a chef friend suggested making it with arugula instead. It never occurred to me that I could make pesto with arugula, but that's the great thing about pesto you can make it how you want! Pick your green, pick your nut, cheese, then its just olive oil and garlic. I love to add my pesto to risotto or pair it with some chicken breast, today I put it on a Panini. I'm sure you will enjoy this pesto, but dont be afraid to make it your own!
Put the following in a food processor and blend until smooth:
1/2 cup walnuts
2 cups arugula, washed & dried
1/4 cup grated parmesan cheese
1/4 cup grated pecorino romano cheese
1 large clove garlic
1/2 cup extra virgin olive oil
salt & pepper to taste
