What is a Curd?

Growing up, Jan had a lemon tree right in her backyard. Those backyard lemons became her first introduction to curd—she'd help make lemon curd for lemon meringue pie, and that bright, tangy-sweet flavor stuck with her ever since. A fruit curd is a luxuriously creamy spread made by gently cooking citrus juice and zest with sugar, eggs, and butter until it's velvety and rich. Unlike jams or jellies, curds have a silky, custard-like texture that's perfect for spreading on scones, filling tarts, layering in cakes, or—let's be honest—enjoying straight from the spoon.

What is a Marmalade?

Right next to that lemon tree in Jan's childhood yard? A tangerine tree. So when it came time to make a marmalade, there was never any question about which citrus to use. Marmalade is a citrus preserve set apart by its suspended pieces of fruit peel, which add a delightful bittersweet complexity you won't find in other spreads. The result is a beautiful balance of sweet and tart, perfect for morning toast, swirling in yogurt or mixing into your favorite cocktail.
